Paul Nicolle’s 2023 "Vieilles Vignes" Chablis is a classic expression of 100% Chardonnay from 35‑ to 45‑year‑old vines in Fleys, rooted in Kimmeridgian limestone soils. The wine is aged 8–12 months on the lees in stainless steel with ~10% in used barrels, offering bright acidity, vibrant mid‑palate weight, and pronounced flinty minerality. Aromas of green apple, lemon zest, white flowers, followed by pear and citrus fruit flavors. It’s fresh, balanced and a fine representation of Chablis in an elegant style.
