Hatzidakis, PGI Cyclades, Rosette, Santorini 2023

The 2023 Hatzidakis Rosette, a dry rosé from Santorini's volcanic soils, is made entirely from the indigenous Mandilaria grape. Hand-harvested from 50–80-year-old vines, it’s fermented naturally and aged in stainless steel, preserving its purity. This wine presents a vibrant magenta color with aromas of ripe red fruits and delicate floral notes, while its palate offers a smooth, buttery texture with a mineral backbone and a hint of salinity. With a 13% alcohol content, it’s an elegant, refreshing wine, ideal for pairing with light dishes like grilled chicken and fresh salads.
