The 2022 Croix & Courbet Côtes du Jura Savadonnay is a refined white wine blending 70% Chardonnay and 30% Savagnin from four biodynamic vineyards in the Château-Chalon area. Crafted by David Croix (Domaine des Croix) and Damien Courbet, the wine undergoes fermentation with indigenous yeasts in 228L barrels, including a small portion aged under "sous voile," contributing subtle nutty complexity. Aged for 18 months in barrel and 18 months in tank, it offers notes of fennel, confit citrus, salt, and quince, delivering a balanced, mineral-driven finish .
