From one hectare of 100 year old Grenache Blanc, Gris and Noir grown on Schist, limestone and pink sandstone using biodynamic methods. Yields are approximately 15 HL/Ha.  

Pressed for 3 hours and fermented with ambient yeasts in large barrels.  

The aged 20 months in foudres

Low amounts of sulphur added before bottling
