Champ Divin, Cotes du Jura, Vin Jaune 2018 620ml

Domaine Champ Divin is a small vineyard started in 2008 by Valerie and Fabrice Closset-Gaziaux. Situated at the foot of the Jura Mountain’s first plateau, Champ Divin is an organically and biodynamically farmed vineyard of 5 ha. The Closset-Gaziaux’s have degrees in Soil and Earth Sciences. After working as biodynamic consultants in South Africa and around France as the Closset-Gaziauxs returned home to the Jura. Domaine Champ Divin grows Pinot Noir, Chardonnay and Savagnin on shale, silty-clay and limestone soils in the village of Gevingey. Harvests are as late as possible to optimize phenolic ripeness. The winery only uses naturally occurring yeasts and low sulfites, allowing the wines to develop with very little human intervention.
