Hand-harvested, 40+-year-old vines, massale selection; single-vyd located in Polisot (Côte des Bars); clay-limestone soils with bands of Kimmeridgian; east/southeast exposure. Clay and Kimmerdigian Limestone bands similar to those found in Chablis. The Cotes des Bar is closer in proximity to Chablis than to Epernay. Farmed biodynamically and hand harvested. Native yeast fermentation in stainless steel for both fermentations. 36-48 months sur lattes; Dosage 0 g/L; no sulfur added; Disgorgement April 2025. Dominique's zero dosage, zero sulfur Pinot Noir is powerful and complex.
