Tom Lubbe, originally from South Africa and raised in New Zealand, established Domaine Matassa in the Roussillon after immersing himself in winemaking at Domaine Gauby in the late 90s. There, he worked with Gérard Gauby, who was one of the few in South Africa utilizing indigenous yeasts and focusing on Mediterranean varietals. Tom’s initial internship quickly evolved into a strong friendship with Gérard, who invited him back for several vintages. During this time, Tom met his wife Nathalie, Gérard’s sister, which rooted him to Calce. When they had their first child, Tom decided to stay, founding Matassa in 2003.
