100% organically cultivated Gamay grown at 390 meters elevation with a northeast exposure (morning sun at the top of the slope). Grapes are hand-harvested and spontaneously ferment 100% whole-cluster in concrete tank for 25 days prior to pressing. Élevage for 8-9 months primarily in neutral demi-muid (80%) and some concrete (20%). Bottled unfined, unfiltered, minimal (<15ppm) to no added SO2 depending on the vintage.
